Blueberry Lentil Pudding

Loaded with antioxidants, fiber, and plant-based protein, this blueberry lentil pudding helps me satisfy my sweet tooth in a healthier way! Great way to use leftover avocado or lentils

Ingredients:

½ cup of red lentils, unseasoned, cooked and cooled

½  cup of frozen wild blueberries

1/2 medium avocado, chopped

4-5 whole soaked dates, pitted

¼-½ cup of plant-based milk of choice

3 tbsp hemp seeds

1 tsp vanilla extract

1 pinch of sea salt

 
Instructions:
  1. Add all ingredients to high-speed blender. Use ¼ cup to ½ cup of plant-based milk depending on the consistency you desire.
  2. Blend until desired consistency is achieved
  3. Place in bowls and top with blueberries or toppings of choice. Ready to enjoy!! :) 

 

Experiment with different toppings like different types of nuts, cacao nibs, dried fruits, or even some nut butter!
